## At a glance

Mahlab is made by grinding the kernels inside the stones of the Prunus mahaleb tree; it tastes of bitter almond and cherry. It flavours Easter bread, festive rings and cookies. Folk belief holds it energising and good for digestion, but these effects have not been studied. Because it contains coumarin, very large amounts should be avoided.
